In the cool fermentation tank, the bitter substance alpha acid of hops cannot be dissolved into the beer isomerically, and the aroma substances slowly penetrate into the beer, providing extra hop aroma and flavor to the beer.
 
Granular hops are the first choice, although they will cause some turbidity (can be solved with a filter / hop bag), the smaller the particles, the easier it is to extract the aroma; the complete flower fragrance is protected by hop glands and difficult to extract; It is slower and sucks up a lot of your liquor.
 
And hop extracts in microbrewery, such as carbon dioxide extracts, are also very suitable for cold processing of hops, that is, dry hopping, but the uneven distribution of the extract after dissolution in the brewery.
