Lautering is a method of separating sweet wort from spent grain. Historically, especially in British ale brewing practice, mashing and lautering often took place in a single vessel, a combination mash–lauter tun. The spent grain thickness has direct influence to lautering efficiency. While brewery equipment lauter tank diameter and malt adding amount will influence the spent grain thickness. Then how to choose suitable diameter for brewery equipment lauter tank according to malt feeding amount?

In our brewing experience, and customers feedback, the spent grain thickness at 25cm - 40cm is better to get efficient lautering, 45cm also is OK. Both are able to get clarify wort within short time. If the cake thickess is over thin, it is difficult to get clarify wort within short time. If the cake thickness is over thick, there will have difficulty on lautering, the needed time is longer.
So 25cm - 45cm cake thickness is most optimal.

In most microbreweries, the malt:water ratio normally at 1:3.
Take 500L system as example, the malt feeding amount around 125kg for brewing.
There have a formula to calculate the spent grain thickness:
Πr2xh=WX1.8/1000
If we calculate the spent grain thickness at 35cm, with the formula, we can get the radius around at 450mm.
Based on 25 - 45cm spent grain thickness, the malt feeding amount can be different from 90kg - 160kg.

NOTE: R is radius of lauter tank, H is spent grain thickness, W is malt feeding weight

While some brewmasters will brew various type beer, the malt : water ratio can be different from 1:1.5 - 1:3.5. The malt feeding amount at 100kg - 200kg.
If we still design 500L lauter tun with 900mm diameter, it is not suitable now. We have to find a balance. If we increase the diameter to 1000mm, it right meet the demands. Perfect.
