Beer Brewery Equipment cleaning procedure: Heat Exchanger

Last article, we introduced the cleaning of beer brewhouse system that included in complete brewery equipment. Today, let’s check how to clean heat exchanger and its related pipeline.
 
Heat exchanger is a part that is easy to get blocked if without careful cleaning. Its cleaning has several same steps as brewhouse system’s cleaning.
 
Step 1: Flush heat exchanger and pipeline with tap water (to wash off flushable attachments)
Clean standard(Same as standard of cleaning brewhouse system):
**The flushed water is clear
**No suspended solids in water
**Water has no peculiar smell
**Water without foam
PS: It is suggested to flush heat exchanger in both direction(from wort inlet to wort outlet first and then flush it from wort outlet to wort inlet).
 
Step 2: Use 2%-4% caustic solution (NaOH solution) for circulating washing for more than 30mins;
Caustic solution temp can be 70C to 100C
It is not necessary to do cleaning in both direction by caustic solution.
 
Step 3: Flush heat exchanger and related pipeline with warm water until clean
Temperature>47℃
The standard of clean is that the pH of the flushed water is neutral or the pH of the water is similar to the pH of the local water (in some areas, the water may always be weakly alkaline)
 
Step 4: Tank spare
 
Step 5: Before use, sterilize heat exchanger with 85 degree hot water for more than 20min.
 
Sterilization with 85 degrees hot water is to ensure that the wort is sterile. The fermentation process needs to be carried out without other bacteria.
85C is temp at the outlet of the heat exchanger. It is suggested to heat hot water to 90C to ensure that the temperature of the wort outlet is 85C. When the hot water reaches 85 degrees, start the timer and cycle for 20 minutes.
It is best to re-sterilize before use. The bacteria will reproduce again after 24 hours.
