A Dry Type Four-Roller Mill in brewing consists of two pairs of rollers, set at different distances apart. The first pair of rollers is set relatively close together to crack open the malt grains, while the second pair is set further apart to crush the grains into a finer consistency. This dual-stage milling process ensures that the grains are ground to the optimal size for mashing.

Function and Operation

Grain Intake: Malted barley is fed into the mill through a hopper.
First Roller Pair: The first pair of rollers performs the initial cracking of the grains. This step breaks the outer husk of the barley without pulverizing it, ensuring that the husk remains relatively intact. The integrity of the husk is crucial as it acts as a natural filter bed during the lautering process.
Second Roller Pair: The partially cracked grains are then passed to the second pair of rollers. These rollers are spaced further apart and crush the grains into a finer consistency. The goal is to achieve a balance where the endosperm is adequately crushed for maximum extraction efficiency during mashing while preserving the husk.

Benefits

Efficiency: The Four-Roller Mill allows for a more uniform grind compared to two-roller mills, leading to better extraction efficiency during the mashing process. This means more fermentable sugars can be extracted from the malt, enhancing the yield.
Quality: By maintaining the integrity of the husk, the Four-Roller Mill helps prevent the formation of a dense mash bed, facilitating better wort separation and reducing the risk of stuck mashes.
Versatility: This mill can be adjusted to handle different types of malt and grain, allowing brewers to fine-tune the milling process to suit specific recipes and brewing conditions.
Consistency: The dual-stage milling process provides consistent particle size distribution, contributing to more predictable and reproducible brewing results.
