The filter press consists of a plurality of filter plates and filter frames, and a filter medium is sandwiched between the filter plates and the filter frame. The wort passes through the filter medium under pressure, the grains particles and impurities are left between the filter plate and the filter frame, while the clear wort flows into the collection vessel through the outlet hole in the filter plate.
The advantages of the filter press filtration method are high filtration efficiency and short filtration time, which is suitable for large breweries. However, this method has a high equipment cost, complex operation, and requires professional technicians to operate and maintain.

The wort lautering process can be divided into two stages, the first stage is to separate the wort from the mash using the grains as a filter layer,This part of the wort is called the first wort. This part of the wort contains more fermentable sugars, nutrients and flavor substances, and its concentration is usually relatively high, because it is the first to be separated, with relatively few impurities and better quality.
The other part is the second wort, the second wort is the wort obtained by adding hot water (generally called sparge water) to the lauter tun containing the remaining wort again after obtaining the first wort, and the wort is washed and soaked to make the remaining fermentable sugars and flavor substances in the wort further dissolved, and then filtered again, so the second wort is also often called "sparge wort". This process is like a "secondary scoop" of the spent grains, extracting as many useful ingredients as possible that can still be used, so that the raw materials can be used more fully and waste is reduced.
