The reasons for beer gushing are generally as follows.
 
1. The raw barley or malt used is contaminated with a variety of molds, and the polypeptides produced by these molds will induce gushing.
 
2. The isomeric compounds of some components in hops, such as derivatives of humulones, paralupulones and isohumulones, can induce gushing.
 
3.Denatured polypeptides are sometimes formed during the fermentation process, and these polypeptides can promote gushing.
 
4. The pressure control of beer storage is high, and the beer temperature control is low during filling, so that the CO2 content of the beer is high.
 
5. Oxalate crystals, metals that can chemically react with organic acids, and poorly dissolved gases contained in beer, these trace compounds that induce gas generation are simply mixed with beer, and are released quickly after opening the lid. , Immediately induce a large amount of gas ejection and promote the formation of beer gushing phenomenon.
