First stage wort and operation points for lautering

For brewing equipment, wort lautering process can be divided into two stages. The first stage is spent grain as filter layer, to separate wort from the mash, it is called first stage wort. The second stage is to wash out the soluble extract, which remained in the spent grain, the wort is called second stage wort or sparging wort. In a grain brewing equipment, the main operation points as below:

1. Pump hot water from bottom of lauter tank, and filled water between tanks bottom and filter (water temperature 76 -78℃), water surface just over filter, to empty air from bottom.
2. Pump mash to lauter tank, running grain rake temporary to get uniform agitating.
3. Rest 15 - 20min, the grist settled on filter and shape filter layer.
4. Start lautering, open or close wort valves alternately, drain out turbid wort and pump back to lauter tank, until wort is clarify, wort circulating time need around 5 -10 min.
5. Open valves one by one, and control wort flow speed, lautering start officially.
6. After lautering some time ( half of total time of first wort lautering), fitler layer is compressed, resistance is increasing, flow speed is lower obviously. Then close lauter valve, and run grain rake to loose grain bed.
7. Restart lautering, pump turbid wort back to lauter tank and until wort clarify. Finish lautering once saw the spent grain surface, the first stage lautering is finished as well.
