Every brewery has its own brewing philosophy, production goals, and technical requirements. At Tiantai, we believe that the right brewing equipment should not only meet production needs but also provide flexibility, reliability, and precise process control.

For our customer in France, Tiantai designed a customized steam-heated brewhouse system that combines practical engineering solutions with a high level of automation, helping the brewery achieve a more efficient and consistent brewing process.

The main brewhouse configurations includes:

1. MLT + KWT + HLT: A Practical Three-Vessel Configuration

The brewhouse consists of a Mash/Lauter Tun (MLT), a Kettle/Whirlpool Tun (KWT), and a Hot Liquor Tank (HLT), with steam heating.

This configuration provides an effective balance between equipment investment, operational flexibility, and brewing efficiency. Steam heating offers responsive and controllable heat transfer, supporting stable temperature management throughout the brewing process.

2. Customized Mash Hydrator for Better Mash Preparation

A customized mash hydrator is installed at the top of the Mash/Lauter Tun to support pre-mashing.

By promoting more uniform mixing of grist and brewing water, the hydrator helps reduce dry clumps and improve mash consistency. This provides a better starting point for enzymatic conversion and subsequent lautering.

3. Glass Wort Grant: Protecting the Lauter Tun False Bottom

A glass wort grant is incorporated into the wort transfer system to serve as a buffer between the lauter tun and the downstream pump.

This design helps prevent excessive negative pressure during wort transfer, reducing the risk of damaging or deforming the false bottom. It also allows operators to observe wort flow visually, making the lautering process easier to monitor.

4. PLC Automation for Precise Process Control

The brewhouse is equipped with a PLC control system, pneumatic valves, temperature transmitters, flowmeters, and other instrumentation.

These components help automate key operations, improve process repeatability, and reduce manual intervention. Operators can monitor important process parameters and manage the brewing stages more efficiently, supporting consistent wort quality from batch to batch.

5. Dual Filters Before the Heat Exchanger

Two filters are installed upstream of the heat exchanger and can be used alternately.

This arrangement provides operational flexibility and allows one filter to be cleaned or serviced while the other is available for use, subject to the system's operating procedure. It helps reduce unnecessary interruptions and supports smoother brewery operation.

6. Tubular Heat Exchanger for Controlled Wort Cooling

A tubular heat exchanger is used to cool the wort to approximately 80°C before hop addition.

This setup supports a dedicated late-hop addition stage, offering the brewer greater flexibility in developing hop aroma and flavor. The actual extraction profile depends on the hop variety, dosage, contact time, and subsequent cooling conditions.

Tiantai, provides customized brewing solutions, from brewhouse configuration and heating methods to process automation and specialized components, Tiantai focuses on tailoring brewing systems to each customer's production requirements.

This French brewery project demonstrates how thoughtful equipment design can improve operational control, protect critical components, and create more flexibility in the brewing process.
